Observed 0 ppm chlorine sanitizer in the dish machine in the back of house. Chlorine sanitizer should be between 50-100 ppm to ensure the dishes are properly sanitized. PIC changed the sanitizer bottle, primed the machine, and the concentration tested correctly. Correct By: Corrected At Time Of Inspection

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed raw burgers and sliced roast beef at 50-51*F in the cold holding drawers underneath the grill area. Cold holding for time/temperature control for safety foods should be colder than 41*F to prevent the growth of pathogens in the food. PIC stated they recently refilled the pan and placed the food into the cooler to chill. Ambient air temperature taken of the unit was 53*F with a min/max thermometer. Suggested placing sheet pans in-between the unit and the grill to block some heat. PIC will utilize the other cold holding units in the meantime. Correct By: Corrected At Time Of Inspection
