Ham and cheese croissants are held using TAC in display case but did not have start time documented during inspection. Person in charge said they had been our for about 9 hours and discarded them at time. Please ensure food items held using TAC have start times documented to ensure a timely discard. Corrective Action: Corrected at time of inspection. PRIORITY VIOLATION-3-501.19 (B1,3-4; C1,4-5) - Priority: Time as a Public Health Control; Temperature, Discarded. Please ensure all time/temperature controlled for safety food items held using TAC are only held at ambient temperature for no more than 4 hours before being sold or discarded. Corrective Action: Corrected at time of inspection.
