Enchiladas in cambro next to ovens are maintained using time as a control and were time stamped to be discarded before 1pm. Employee said these were and and had been prepared more recently. Exact make time could not be determined and item was discarded at time. Please ensure all food items maintained using time as a control have make times accurately documented to ensure a timely discard. Multiple covered and stacked containers of cooked pasta in walk-in cooler measured 50-54 degrees F. Items had been cooked about 5 hours prior and were documented on cooling log (cooling not yet complete). Items were uncovered and allowed to cool more efficiently at time. Please ensure food items are cooled in shallow, uncovered containers until they reach 41 degrees F to allow for maximum heat exchange. Corrective Action: Corrected at time of inspection.

Items measured 90 degrees F because they had been prepared 2 hours prior. Time stamps were corrected to indicate an accurate discard time. Please ensure food items maintained using time as a control have accurate start times documented to ensure a timely discard. Corrective Action: Corrected at time of inspection.

Observed raw shrimp, cooked chicken, and cooked turkey in the far right cold holding unit at the cook line with temperatures ranging from 47-52*F. Ambient air temperature taken of the unit with a min/max thermometer was 50*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below to prevent the growth of pathogens. PIC stated the food had been on the line since 1 pm and moved them to the walk-in to rapidly cool down to 41*F. Corrective Action: Corrected at time of inspection.

Observed an ambient air temperature of 50*F in the far right cold holding unit at the cook line. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. The PIC will only use the bottom drawers of the unit for raw, whole vegetables until the unit has been serviced by a professional technician. The walk-in will be used for storage of proteins in the meantime. Corrective Action: Corrected at time of inspection.

Priority Foundation-6-501.111 (C), Pf: Controlling Pests; Approved Trapping Methods/Existence Observed over 20 small flies in the ware-washing and kitchen areas. PIC presented an invoice from 8/15 showing the flies are being treated by their pest control company. The pest control company has given recommendations on their invoice for the establishment to work on. An in-person reinspection will be conducted on Wednesday Sept 6th. Please have another service done by the pest control company and keep all invoices. Correct By: Correct Prior To Reinspection
