Observed 3 deep metal trays of cheese sauce cooling in walk-in cooler, items measured 55-64 degrees F internally and had been cooling for nearly 6 hours per cooling log. Items were reheated to 165 degrees F before being cooled in an ice bath. Please ensure all food items are cooled in shallow, uncovered containers, or ice baths to ensure all cooling temp/time benchmarks are met (135-70 degrees F in 2 hours, 70-41 degrees F in an additional 4 hours). Corrective Action: Corrected at time of inspection.

Observed 138*F in the hi temp dish machine in the ware-washing area. When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. The PIC stated the booster heater is not working and the 3-compartment sink was set up, and will be used in the meantime. Corrective Action: Corrected at time of inspection.

Observed mac cheese sauce in a hot holding unit on the cold side of the cook line with an internal temperature of 73-80*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above to prevent the growth of pathogens. Per PIC the sauce was made right before service at 4 pm. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.
