A sanitizer bucket with a wiping cloth at the wok station was measured with 0ppm chlorine. Wiping cloths should be stored in sanitizer solutions maintained at the proper concentrations (50-100ppm for chlorine, 200-400ppm for quaternary ammonium) when used in active food prep stations. Person in charge (PIC) remade sanitizer solution during inspection to correct. Corrective Action: Corrected at time of inspection.

Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of bacteria and contamination. Employees washed hands for full 20 seconds at time of inspection.
