In walk in cooler, in shallow covered metal pans, fully cooked shredded carnitas/55*F-60*F and fully cooked shredded carne asada/60*F-68*F stored after preparation. Per date stickers, carnitas and carne asada were prepared <1 hour. Employee provided ice baths for pans of carnitas and carne asada to continue the cooling process. TCS foods are to be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means.
