Inspector's notes

At in use 3-compartment sink, employee washed, rinsed, and sanitized dishware in quat sanitizer <10 seconds. Per manufacture guidelines, dishware is to soak in quat sanitizer a minimum of 60 seconds. Dishware was moved back to quat sanitizer solution for increased contact time. Food-contact surfaces sanitized using quaternary ammonia must be sanitized with a contact time according to manufacturer specifications. Corrective Action: Corrected at time of inspection.
