Hot held TCS food items must be maintained above 135*F. If they fall below 135*F and require reheating, they must be reheated to a temperature over 165*F before being place back into hot holding. If a hot held TCS food item is held in the temperature "danger-zone" between 70*F and 135*F for 2 hours or longer, it must be discarded.
