Repeat violation: 3rd. Observed sawdust gravy, shredded cheese, tuna salad, potato salad, shredded lettuce, and sliced tomatoes in prep cooler in kitchen at 44-49 °F. Observed minimum ambient air temperature of 48 °F in cooler as measured with min/max holding thermometer. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods except for tomatoes and gravy had been placed in prep cooler the day prior as per person in charge. Tomatoes and gravy were relocated to alternate functioning refrigeration unit at time of inspection to rapidly cool to 41 °F. All other TCS foods were discarded at time of inspection. Discussed monitoring temperatures with person in charge. Corrective Action: Corrected at time of inspection.

Instructed employee to re-wash hands with soap and dry with provided disposable paper towels at handwashing sink. Discussed the importance of proper hand washing procedures with the person-in-charge (PIC). Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination. Corrective Action: Corrected at time of inspection.

At front service counter, in reach in cooler, TCS foods (sour cream, whipping cream, salsa) with internal temperatures of 50*F and ambient temperature of cooler at 50*F. All temperatures were taken with inspector probe thermometer. Per employees, TCS foods were placed in two coolers within normal time parameters. Employee adjusted ambient temperatures of prep table coolers to 36*F and internal temperatures of TCS foods dropped to <41*F within 45 minutes. Discussed more frequent monitoring of ambient temperatures of TCS foods in prep table coolers.
