All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. On hot dog roller, hot dogs and bratwursts with internal temperatures of 120*F-130*F. Per employee, hots dogs were placed on unit within normal time parameters. Employee moved hot dogs and bratwurst to front rollers to reheat back to 165*F. Maintain TCS (time/temperature control for food safety) foods at a hot holding temperature of 135*F or higher at all times. Corrective Action: Corrected at time of inspection.
