Inspector's notes

Shredded lettuce on the line next to the fryer with set discard time at 2. Current time was 9:20. PIC in was unsure of when the lettuce was placed onto the line and voluntarily discarded-see embargo form. Employee observed placing cut tomatoes on the make line and did not a set a discard time. The employee was instructed to set a discard time and did so. Food items in which time is being used at a public health control should be marked or otherwise identified to indicate the time of discard following internal policies. Corrective Action: Corrected at time of inspection.
