Per cook, all items were placed in prep table longer than 4 hours prior to inspection. Sliced tomatoes and cut lettuce were embargoed at time of inspection. Reviewed proper time as control procedures with person in charge (PIC) at time of inspection. All TCS foods being held under time as a control must be properly time stamped when brought out.
