Inspector's notes

Observed deli sandwiches with meat ingredients 51*F, cut fruit cups with melon as an ingredient 48*F, various prepackaged cheeses 47*F-49*F, cooked pasta salad 44*F, deli meat wraps 44*F, salad with cut lettuce and meat 45*F, yogurt parfait 44*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. PIC stated the items had been there since this morning, 5 hours prior. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed no working thermometer in the cold holding unit holding TCS food items by the restrooms. Digital thermometer within the unit was not on or displaying a temperature reading. A thermometer must be inside a refrigerating or freezer unit holding TCS products and readily accessible. Corrective Action: Correct prior to next routine inspection.
