Inspector's notes
In the walk-in cooler, observed cooked potatoes, potato cake, and cooked noodles with an internal probed temperature range of 48-49 degrees F. Items have been in walk in all morning. Morning temperature logs show walk in cooler temperature at 38 degrees F at 7:30AM. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
