at the time of site inspection facility was serving /assembling hot dogs, and nachos and cheese/. temperatures taken, indicating 122-126 for the hot dogs, and 126 for the cheese. recommended to preheat, set the electric pot to ensure tcs food is kept at 135 deg f or higher. manager reheated cheese to 165 deg f. also, the lids for the cheese were partially open. suggested to keep food covered and verify proper hot holding, using a metal stem thermometer. Corrective Action: Corrected at time of inspection.
