Cheese item, cilantro, tortilla strips, and jalapenos stored in open containers on counters in self service areas in the cafeteria and doctors lounge areas. PIC provided lids to cover all items. Observed establishment cooling full medium size containers in sandwich reach in unit. Internal temperature of all cooked chicken is at 73*F-80*F with inspector thermometer. Notified Person In Charge (PIC). PIC confirmed internal temperatures. Per employee, just restocked cooked chicken. PIC directed employee to cool all listed cooked chicken inside main walk in unit to cool to 41*F. Verified after 1 hr. Sandwich reach in is at 42.3*F with min/max thermometer. ====An improper cooling method is used. Corrective Action: Corrected at time of inspection.
