Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PIC added quat sanitizer to appropriate levels and returned previously washed food-contact surfaces back to the three compartment sink to be properly sanitized at the time of inspection. PIC stated TCS food items were in the prep table since the previous day. All TCS foods improperly cold held were discarded by PIC at time of inspection. Observed a crate of raw, unpasteurized shell eggs being stored at room temperature; eggs measured 75*F internally on a calibrated probe thermometer. Per PIC, eggs had been taken out of cold holding unit 6 hours prior. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed that the sanitizer in the basin of the 3 comp sink test at less than 150ppm of QAT sanitizer. The sanitizer is required to be between 200ppm and 400ppm to properly sanitize wares. It was discovered that the current sanitizer container was empty. The PIC replaced with a new container of sanitizer, after which the tested concentration was between 200ppm and 400ppm.
