Predefined Comment: Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks.

Corrective Action: Corrected at time of inspection. No gloves in use at the sushi bar. Employees handled ginger, cucumber, rice and other ready to eat foods at the sushi bar. Directed PIC to discard RTE items that had been handled bare-handed.
