Instructed employee to maintain in use wiping cloths in sanitizer solution in between uses. All wet wiping cloths are to be stored in sanitizer buckets with approved quat sanitizer concentrations. Per employee, rice was prepared earlier in day. Employee entered in pH of sushi rice. During calibration of pH meters (two separate pH meters were used), unable to obtain accurate readings for buffer solution to ensure accurate reading of rice pH. By end of store inspection, employee able to properly calibrate both pH meters. Employees will monitor pH meters to ensure accuracy and if needed, new pH meters will be purchased. Discussed the importance of following establishment written variance requirements for sushi rice. Correct By: Corrected At Time Of Inspection
