There was no approved hand drying provision at the hand sink behind the front counter. Person in charge (PIC) re-stocked the paper towels at time of inspection. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC provided hand drying provision for handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Corrective Action: Corrected at time of inspection. Whipping cream in in-use insulated cannister at 61*F internally. PIC stated cannister had been prepared the previous evening. Embargoed, PIC discarded. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Discussed hand washing the cannisters, rather than putting them in the high temperature dishwasher, then storing the cannisters in the walk-in with the lids off to ensure there is no residual heat inside and the cream maintains 41*F or below.
