Observed acoustic ceiling tiles above areas in the kitchen where food is prepped and served. Replace ceiling tiles with smooth and cleanable vinyl tiles or flip existing tile and paint with semi-gloss/gloss paint prior to the next routine inspection. Ready to Eat (RTE), Time/Temperature controlled for safety (TCS) foods are required to only be held for 7 days only. Macaroni was embargoed. Instructed manager to ensure RTE, TCS foods are only held for 7 days.

Equipment that regularly creates aerosolized grease or smoke should be fully contained under the hood vent.

Observed wiping clothes stored in 25ppm chlorine sanitizer on the cart near the back door. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Inside the coolers, observed TCS foods with internal temperatures ranging from 45-52*F when measured with a probe thermometer, including: tzaziki sauce, housemade ranch, opened milk, boba pearls, and cheese sauce. Except during preparation, cooking, cooling, or when time is used as a control all TCS foods are to be maintained at 41°F or less. PIC stated the foods had been in the cooler for less than 4 hours and were moved to other units and the freezer to rapidly cool.
