Inspector's notes

On the line observed a container of raw pork chorizo/54°F held at room temperature. In the glass door beverage refrigerator observed a container of portioned cooked carrot + vegetable mix/46-47°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. After discussion with the person in charge it was determined the chorizo had been at room temperature for about an hour. The chorizo was relocated to refrigeration at time of inspection. After discussion with the person in charge it was determined the cooked carrot + vegetable mix was in the glass door refrigerator for over 4 hours. The cooked carrot + vegetable mix was discarded by the PIC at time of inspection. In glass door refrigerator observed thermometer measuring ~47°F. With inspector's min/max thermometer observed minimum temperature of 48.5°F. Instructed PIC to discontinue storing TCS foods in the unit until it is serviced and maintains TCS foods at 41°F or less. Corrective Action: Corrected at time of inspection.
