Smoking or eating by employees in food preparation areas is prohibited because of the potential that the hands, food, and food-contact surfaces may become contaminated. Employee put away their lunch. Discussed eating meals in designated areas away from food preparation. Corrective Action: Corrected at time of inspection.

#21 — Proper Hot Holding TemperaturesPriority3-501.16

Inspector's notes

Observed jalapeno cream cheese taquito with an internal temperature of 133°F on the roller grill where foods that had already been reheated are displayed. Observed multiple Monterey jack chicken taquitos with internal temperatures between 120-122°F on the roller grill where foods that had already been reheated are displayed. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. After discussion with the person in charge, it was determined all TCS foods were moved to the display rollers an hour ago. Instructed PIC to reheat foods to 165°F at time of inspection. It was determined that the roller grill temperature was not set high enough. PIC adjusted the temperature at time of inspection. Corrective Action: Corrected at time of inspection. Repeat Violation: 2nd.

Observed chili/123°F and cheese/100°F in hot dispenser. The product had been in the dispenser since 8:56 AM (2+ hours). Observed cooked hotdogs/128°F and assorted cooked taquitos/127-128°F on front roller grill. After discussion with the person in charge it was determined the hot dogs and taquitos were set up more than 2 hours prior.
