Observed person in charge (PIC) place two loaves of bread onto tray with bare hands and send the tray out to the front of the bakery for sale. Bare hand contact is not approved with ready-to-eat (RTE) food items. Wash hands per code and shall not contact exposed RTE foods with bare hands and shall use suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment. Discussed the importance of preventing bare hand contact with ready-to-eat (RTE) foods with PIC. RTE bread that was contacted by bare hands was discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed accumulation of food debris on walk-in light switches and cold holding equipment door handles. Nonfood-contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Nonfood-contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues. PIC instructed food employee to clean nonfood contact surfaces at time of inspection. Corrective Action: Corrected at time of inspection.
