Inspector's notes

Observed containers of burrito rojo with an internal temperature of 55°F. Burrito rojo containers were datemarked for 4/23/25 and 4/24/25. Per PIC, burrito rojo was cooked and placed into walk-in cooler by food employee to begin cooling. Per PIC, cooling temperatures were not observed after the containers of burrito rojo were placed into the walk-in cooler. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. After discussion with the person in charge, it has been determined that the root cause of the violation was a verification breakdown, which resulted in the violation. All TCS foods improperly cooled were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed containers of cooked menudo date marked for 4/18/25. Per Person in Charge, date mark on container notes the date that the menudo was cooked. A food shall be discarded if it exceeds the 7 day time limit at 41ᵒF, except time it is frozen. After discussion with the person in charge, it has been determined that the root cause of the violation was a verification breakdown, which resulted in the violation. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.
