A rack of raw pork bellies (chicharrones) was left in the meat-cutting area at room temperature with a fan blowing on them to dry them. The chicharrones were at 70 degrees F for 1 hour. The chicharrones were moved back into the walk-in cooler at 38 degrees F. The chicharrones must not be left out at ambient temperature, and never with a fan blowing on them. Corrective Action: Corrected at time of inspection.
