Inspector's notes
In cold case, TCS (hummus, pre-packaged deli meat sandwiches, string cheese) with internal temperatures of 50*F. Per person in charge, TCS foods were in cold case within normal time parameters. Hummus, deli meat sandwiches, string cheese were moved to other end of cold case to rapidly cool back down to proper temperatures. Discussed monitoring cold case to ensure whole case is consistently able to maintain proper temperatures at all times of day. Maintain TCS (time/ temperature control for food safety) foods at a cold holding temperature of 41*F or less at all times. Corrective Action: Corrected at time of inspection.
