Observed deli sliced ham, turkey, cheese blend, mozzarella cheese, pepper jack cheese, cheddar cheese, and swiss cheese ranging from 45*F to 51*F in the mini refrigerator. Ambient temperature of the unit was 32.1*F using min/max thermometer. Person in charge stated the food items were placed in the unit one hour prior to inspection from the walk-in. Corrective Action: Corrected at time of inspection.

Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
