Observed cooked and cooled chicken in top portion of sandwich prep cooler at 51*F. As per the owner the chicken was cooked prior to lunch and a small amount was placed in cooler less than 2 hours prior to the inspections. Advised owner to cool chicken in bottom portyon of cooler to 41*F prior to placing into top portion. Observed noodles stored in top portion of sandwich prep cooler across from wok at 45*F As per the owner the noodles were prepared prior to the inspection and placed in top portion of sandwich prep cooler prior to the inspection starting. Product were placed into walk in cooer to rapidly cool to 41*F. Corrective Action: Corrected at time of inspection.

Observed foods such as chicken, beef and breaded chicken along wok line at temperatures of 113*F - 120*F As per the owner of establishment these items are cooked prior to lunch and reheated at the woks when ordered. Advised owner to document discard times in a manner that staff know when to discard any food after 4 hours. Correct discard times were added to foods along wok line. Corrective Action: Corrected at time of inspection.

Employee changed out container of sanitizer and ran again with no change in concentration. After watching cycle it was determined that no sanitizer was being dispensed during wash cycle. Employee primed machine until sanitizer began to dispense and dishwasher was run again. After running through another cycle sanitizer measured around 50ppm. Chlorine sanitizer shall measure a concentration of 50-100ppm. Correct By: Corrected At Time Of Inspection
