Sliced tomatoes, sliced ham, and other TCS food items found with internal temperatures of 51-60*F in the prep cooler nearest the far end of the cook-line. PIC stated the cooler was last known to be at 41*F or below around 12:30 PM today and moved the TCS food items to the walk-in for cooling and continued cold holding. Please ensure cold held TCS food items are maintained at 41*F or below. Corrective Action: Corrected at time of inspection.

Food items such as sliced tomato, raw hamburger, t-bone steaks, and more found with internal temperatures of 66-71*F. PIC stated the cooler was last checked sometime during the weekend and the food items had been placed in the cooler around 7:00 AM today. The TCS food items in the cooler were discarded (see embargo form). The cooler appeared to be nonoperational as no airflow could be felt from the vents of the cooler. The cooler will not be used for cold holding TCS food items until it has been repaired/replaced and able to maintain an ambient of 41*F or below. Alternate coolers are nearby to continue normal operations. Please ensure cold held TCS food items are maintained at 41*F or below. Correct By: Corrected At Time Of Inspection
