Salsas at salsa bar at 50*F. As per the person in charge the refrigeration unit not been operating consistently and they staff was placing ice beneath the product to help maintain 41*F. Advised the person in charge to use time as control since a consistent cold temperature is not available. Provided policy and chart to assist with process. Salsas were embargoed and discarded. Additional ice was added and staff will use time as control until unit is repaired. Corrective Action: Corrected at time of inspection.

As per the person in charge, owners are looking to purchase a new cold hold unit.

In walk-in cooler, four pans of beans measured an internal temperature ranging from 54-56'F. Date on beans indicated they were made the previous day and was confirmed by person in charge. As beans had not cooled within proper time frame they were embargoed. Reviewed establishment's cooling process with person in charge as well as proper time frame/methods for cooling. TCS foods shall go from 135'F to 70'F within the first 2 hours and down to 41'F within the remaining 4 hours when cooling. Corrective Action: Corrected at time of inspection.
