Observed water draining from the ice machine onto the floor due to the drain line outlent not properly placed directly over the floor drain. Observed gap in the wall around a plumbing insertion behind the ice machine. Discussed all waste water from the ice machine to properly drain directly into the floor drain, and to seal gaps/holes in the walls.

Observed in the walk-in cooler plastic containers and container lids being stacked and stored as clean while still wet. All equipment and food contact surfaces must be air-dried after properly cleaning and sanitizing. Discussed with PIC unstacking wares to allow them to properly dry, as well as finding space to dry wares before stacking them. Corrective Action: Correct prior to next routine inspection. Repeat Violation: 2nd consecutive violation.

Observed wet stacked plastic lids, containers, and separators in the walk-in refrigerator. PIC stated that their process is the wash, rinse, sanitize, and then allow them to airdry before being put away. Suggested to PIC to wash less at a time in order to air dry better in the available space or find more space for clean dishes to dry. PIC understands and informed employees. All equipment and food contact surfaces must be air-dried after properly cleaning and sanitizing. Corrective Action: Correct prior to next routine inspection.
