Observed an accumulation of dirt, dust, food debris, and organic matter along various sections of the deli department. Notable areas include the ceiling and A/C vents located near the 3-compartment sink as well as surfaces along the interior of the deli meat and cheese display case near the sliding doors. The establishment shall clean the deli department at a frequency to prevent the accumulation of dirt, dust, food debris, and organic matter. Corrective Action: Correct prior to next routine inspection. 6-501.11 - Core: Repairing -Premises, Structures, Attachments, and Fixtures-Methods Addl Notes: Observed section of wall with broken tiles creating holes in the wall underneath the prep sink near the walk-in refrigerator. The establishment shall repair the broken tiles and close any holes/gaps in the wall to provide a smooth, easily cleanable surface and to prevent harborage conditions for pest species. Corrective Action: Correct prior to next routine inspection.
