Inspector's notes

Observed chicken nuggets and ground beef with an internal temperature of 117-120*f on serving line and in hot box. According to PIC, chicken had been previously cooked 1 hour prior to inspection and were re-heated to 165*f at time. According to HACCP logs all foods use temperature as a control for food safety, with the exception of salad bar. PIC also stated all items on serving line are discarded. Discussed switching logs to use time as a control for food safety instead.
