Observed several used damp wiping cloths sitting out on the counter. Alerted the manager, who took all the incorrectly stored used-damp cloths to the hamper at time of inspection. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Fresh wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed a small hole and a fractured wall panel above the stacked boxes of potatoes in the dry storage room. Upon closer observation, an air current smelling of sulfur could be felt when placing a hand over the hole. Directly on the other side of the wall, EHS observed a gas line feeding into the facility. Immediately alerted the manager, who called both the owner and the gas company at the time of inspection. Proper repair of the facility is required. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Repair physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

SECOND REPEAT. Observed cooked beef ribs (108°F) and smoked chicken (123-128°°F) in the hot holding unit measuring with an internal temperature below 135°F. An employee stated the cooked meats had been cooked and placed in the hot holding unit less than 1.5 hours before temperature measurement. Foods were reheated and the hot holding unit was adjusted to a higher temperature at time of inspection. Discuss above the required 135°F hot holding temperature for hot holding foods. Discussed hot holding requirements with staff. Corrective Action: Corrected at time of inspection.

Observed cheese sauce hot holding at 117-126°F double panned on the grill top. The cheese sauce had been made less than 4 hours prior to temperature measurment. The hot water was not to the level of the food, so the top portion of the cheese sauce had cooled. Staff reheated the cheese sauce to 165°F. After adding more hot water to the first pan, the second pan of reheated cheese sauce was submerged to the level of the food. Air is not a good conductor of heat.
