Observed a metal container of raw in shell eggs above RTE foods like milk and sauces in the perp table refrigerator located back of house. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed a small plastic container of sausage (87°F) and a small plastic container of grilled onions (123°F) covered and wrapped tightly in plastic wrap. The cook stated both foods were cooked less than 30 minutes prior to temperature measurement. Many food items in the refrigerator had heavy condensation on the top plastic wrap, indicating that other foods may have also been covered too soon. Warm foods were uncovered to quickly cool at the time of inspection. Discussed the importance of air flow in cooling items in the prep and standing refrigerators. Foods to remain uncovered until they reach 41°F. Corrective Action: Corrected at time of inspection.
