observed at the food service assembly station. shredded lettuce at 46-47 deg f . also a pan of shredded cheese left out. temperature indicating 60-61 deg f . discussed with manager on duty. proper cold holding for onsite prepared tcs food (41 deg f ) reviewed. manager removed cheese and lettuce. use of shallow metal pan, and ice bath for the immediate front foodservice/ stand reviewed. manager removed food. discarded.
