observed wrapped pans of cooked, and baked potatoes at 75-79 deg f . pans were stored under the bread racks and wrapped tight. inquired about the food cooking time and start of the cooling. per manager prepared today. manager removed wraps. suggested to use ice bath , and keep cooling food closer to walk-in cooler top shelves to facilitate rapid cooling. also use of ice bath and shallower pans reviewed. MCESD food cooling guidance document reviewed. copies provided. Corrective Action: Corrected at time of inspection.
