Observed the ventilation system above the grill and stove to have either missing/hanging down high temperature caulking. Discussed with person in charge (PIC) all fixed parts of the ventilation system shall be sealed with high temperature caulking to create a smooth and cleanable surface to prevent accumulation of grease buildup. Discussed to reseal with high temperature caulking prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

No County legal action will result from this inspection.Of Note: Discussed with person in charge (PIC) the mop sink by the dock that has a chemical dispenser that is directly connected with a hose and a Y-valve to a faucet with an AVB shall have a separate water line installed upstream from the AVB for the chemical dispenser in order to allow the AVB to operate without being under constant pressure. The faucet with the AVB should be able to be used independently of the chemical dispenser. This will prevent chemicals from being syphoned into the clean water supply. Also discussed with PIC the installation/use of a Y-valve on a faucet with or without an AVB is prohibited, because the system is not designed, constructed and installed according to law. Provided Backflow Prevention document to PIC.

Observed missing, separated and cracked caulking along the hood ventilation system above the cook line with buildup of grease drippings along the wall behind the equipment. Per PIC the ventilation was just cleaned. Discussed with PIC the seams of the ventilation system shall be filled with caulking to avoid grease build-up and dripping onto food. Discussed to caulking will create a smooth and cleanable surface. Also observed missing caulking on the ventilation of the Mongolian Grill. Corrective Action: Correct prior to next routine inspection.

Core-4-204.18, C: Condenser Unit, Separation >>>Observed in double stack cold holding unit that is next to the handwash sink on the cook line, without a cover protecting the top sheet pan from dust falling from the condenser vent from the ceiling of the unit. Discussed with PIC the food storage space shall be protected by a dustproof barrier. Per PIC the unit was previously serviced. No contamination observed at time of inspection all other food items lower in the unit were relocated. Per PIC a work order would be put in at the time of inspection. Core-6-501.11, C: Repairing-Premises, Structures, Attachments, and Fixtures-Methods >>>Observed dishwasher at a temperature of 151*F with high temperature puck thermometer. Ran the puck through a second time and reached 158*F. Per PIC the activator switch for the final rinse gets stuck at times. Per PIC the switch gets shifted out of place over time and he adjusted the switch and the dishwasher high temperature thermometer reached 160*F. Discussed with PIC to have the unit maintained in good repair and PIC put in a request to have the unit receive maintenance at the time of inspection.
