Observed two sanitzer wiping clothes wet and stored outside of sanitizer under the espresso machine. Also observed the small sanitizer tray of the quaternary ammonium used from under the espresso machine to have 0ppm. Discussed with Person in Charge (PIC) all wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection. 2nd Consecutive Violation

Observed dishwashing machine drainage pipe with an attached clear hosing directly into the floor sink without a 1 inch air gap. Discussed with Person in Charge (PIC) all floor drains and drainage pipes shall have a minimum of 1 inch of air to prevent any back syphoning of contaminants. PIC requested facilities to fix and the plastic piping was removed creating the 1 inch air gap at time of inspection. Corrective Action: Corrected at time of inspection.
