Observed several different containers of frozen fruit, cut lettuce and cut kale with the scoop stored in the container with the handle touching the food. Discussed with Person in Charge (PIC) to store scoop out of product or store the scoop in the product with the handle upright. PIC fixed all scoops to be stored with the handle upright. Training can be done after city’s approval to occupy the space.Please address the following items prior to the final construction inspection:1. Provide sneeze protection at the blender’s area. Sneeze guard must be at least 60” from the finished floor.2. Provide a faucet for the sprayer arm at the 3-comp sink.3. Anchor the sprayer arms of the prep and 3-comp sink to the walls.4. Fill gaps at blender station’s floor sink.5. Flash off top of the walk-in units to the ceiling. 6. Seal around all conduits, pipes and light fixtures’ penetrations inside the walk-in units. Please use low temp silicone.7. Seal gaps at trims, countertop and die wall junctures. 8. Provide several coats of semi-gloss or high-gloss paint on the substrate of the countertop.9. Walk-in units are installed.Please address the following items prior to the next inspection:1. Switch the hand sink for the ice machine area to the other side of the wall.2. Provide drop ceiling with washable ceiling tiles in the back area. Scrimp sheets are not acceptable.3. Flash-off sides and top of walk-in units to adjacent walls and ceiling.4. Paint wood substrate under countertop.5. Provide escutcheon plates around pipe penetrations.6.
