Observed containers of shredded cheese inside walk-in cooler with no date mark. Per Person in Charge (PIC), shredded cheese inside said containers was prepared and placed into walk-in cooler more than 24 hours prior to the time of inspection. Ready To Eat (RTE)/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days. Shredded cheese containers were properly date marked at the time of inspection. Corrective Action: Corrected at time of inspection.

Priority Foundation-6-501.111 (C), Pf: Controlling Pests; Approved Trapping Methods/Existence -- Observed live German cockroaches located in the dry storage areas and near the walk-in refridgerator. Please ensure the establishment is free of insects and other pests by inspecting shipments of food, inspecting premises for evidence of pests, and eliminating harborage conditions. The person in charge shall have a certified pest applicator come to the establishment and perform pest control within 10 days and a re-inspection will be conducted once completed.
