Observed cooked and cooled and tomatillos for salsa and red salsa at 70*F. at prep table across for large grill. As per the person in charge the items were out to complete making salsa and items were to be placed in walk in cooler. When completed the salsa is cooled to 41*F for use the next day. Advised person in charge to only bring out enough ingredients to prepare foods in 30 minutes to keep cold ingredients at 41*F and to prep foods further from grill line. Items were returned to walk in cooler to cool back to 41*F Observed cooked and cooled pork in walk in cooler at 44 - 45*F in walk in cooler. As per the person in charge the pork was removed prior to lunch to portion out for reheated. Advised person in charge to not remove large portions to prepare for service. Prep smaller amounts to ensure cold food stays at or below 41*F. Observed meat and salsa taco mixture for preparing small tacos at 70*F. As per the person in charge the meat was removed from walk in cooler to prepare small tacos for service and then returned to cooler. Items was embargoed and discarded. Corrective Action: Corrected at time of inspection.

#20 — Proper Cooling Time and TemperaturesPriority3-501.14

Inspector's notes

In walk-in cooler behind meat counter, two large bins of cooked beans measured an internal temperature of 47-55'F, a bin of shredded meat measured an internal temperature of 50'F, and two bins of carnitas measured an internal temperature of 53-56'F. Person in charge verified that all items had been cooked the previous day. As food had not cooler within proper time frame it was embargoed. Discussed with person in charge more effective methods for cooling, particularly regarding depth of food product in containers. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.
