Assisted the person in charge (PIC) with priming the dishwasher at the time of inspection. After priming the dishwasher and rerunning it multiple times, the sanitation levels tested within the 50ppm-100ppm range. Please ensure employees are checking detergent/sanitizer containers often and utilizing test strips to verify dishes are getting properly sanitized. Correct By: Corrected At Time Of Inspection

For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4125/Food-SafetyOperator-Resources. -- Observed containers of white cheese, yellow cheese, shredded lettuce, sliced tomatoes, and chopped lettuce being held at room temperature near fryer and main prep line. The person in charge (PIC) stated the TCS items were removed from cold holding approximately 3 hours prior to the inspection (1:00 PM) and the establishment uses time as a public health control policy. Inspector requested written documentation or policy showing when the items were removed from temperature control. The PIC unable to provide clear policy or time tracking for the TCS foods at the time of inspection. Spoke with PIC regarding time as a control requirements. Requested PIC place documentation on containers for remaining hour prior to discard requirement. Ensure training is conducted for all employees for properly documenting time as a control.
