Observed TCS cheese with milk as an ingredient between 129*F-133*F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. PIC stated the cheese had been there since the previous day and discarded the cheese. Corrective Action: Corrected at time of inspection.
