Inspector's notes

Observed dishes actively being washed in <50ppm quat sanitizer solution. Further investigation showed a nearly empty bag of quat solution was being used for the automatic dispenser and was not pulling enough out. Food-contact surfaces must be properly sanitized after washing and rinsing. Employee drained the sink, placed a new bag in the dispenser, and filled the sink with 400ppm quat solution at time of inspection. Corrective Action: Corrected at time of inspection.
