Corrective Action: Correct prior to next routine inspection.

Observed opened packages of sliced ham in cold holding unit stacked above the fill line. Internal temperature of ham above the fill line measured at 50*F. Employee stated ham was in unit for less than 2 hours. Ham improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Discussed with person in charge (PIC) that ham should not be stacked above fill line to maintain cold hold temperature, and to let other employees know the same. Corrective Action: Corrected at time of inspection.
