Observed sealed packages of ready-to-eat (RTE) diced ham and a whole ham stored on a speed rack under a box of frozen, raw sausage links, in the walk-in cooler. The speed rack was rearranged so that all RTE food is stored under raw proteins. Discussed the proper storage order of RTE foods and raw proteins, which is based on the required final cooking temperature. All RTE foods must be above and protected from raw proteins to prevent cross contamination. Corrective Action: Corrected at time of inspection.

Chicken soup-104F cooling in a large deep container on the prep table next to the stove. Per employee, the soup began cooling an hour and fifty minutes prior. The PIC instructed the employee to put the soup in a shallow container and relocate to the walk in freezer to rapidly cool. Ensure that proper cooling methods are followed: (1) Placing the FOOD in shallow pans; Pf (2) Separating the FOOD into smaller or thinner portions; Pf (3) Using rapid cooling EQUIPMENT; Pf (4) Stirring the FOOD in a container placed in an ice water bath; Pf (5) Using containers that facilitate heat transfer; Pf (6) Adding ice as an ingredient; Pf or (7) Other effective methods. PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. >>> Observed cooked oatmeal, cooked grits, cooked cream of wheat, cartons of milk, cooked rice, various cooked soups and pastas, assorted cheeses, sliced ham and sliced turkey cold holding in the walk-in cooler with internal temperatures of 47-50F, probe thermometer, verified by PIC. According to PIC, the food was at 38F less than 4 hours prior to inspection. TCS foods were placed into the walk-in freezer to rapidly to cool to 41F or less. Except during preparation, cooking, cooling, or when time is used as a control all TCS food must be maintained at 41°F or less. Bacterial growth and/or toxin production can occur if time/temperature control for safety food remains in the temperature "Danger Zone" of 41F to 135F too long. Priority Foundation-4-301.11, Pf: Cooling, Heating, and Holding Capacities-Equipment. >>> Observed the walk-in cooler with an ambient air temperature of 42-50F, see violation #20. The walk-in appears to not be maintaining food at 41F or less due to reasons such as a high ambient air temperature in the kitchen and inadequate airflow and space in the walk-in. According to PIC, the delivery was received an hour prior to inspection and the a/c may not be adequately cooling the kitchen. HVAC techs onsite during the inspection. Re-inspection 24 hours to ensure that the walk-in is maintaining food at 41F or less.
