Inspector's notes

Observed meat around the meat slicer blade. Employees said it had not been used since the previous day. The slicer was disassembled and cleaned. Also observed meat left under the cutting board tables. The tables were re-cleaned. This establishment is currently using stickers to keep track of the time to clean the equipment, as it is required, they are fully washed, rinsed and sanitized every 4 hours. Corrective Action: Corrected at time of inspection. PRIORITY VIOLATION-4-702.11 - Priority: Cleaned and Sanitized Before Use After Cleaning. Observed the following food items in walk in cooler #1 holding 48-51F: Menudo, carnitas, and carne asada. PIC stated that they were cooked the previous day. PIC stated that they were cooked at 5pm the previous day. Some items were covered and some were not. Discussed their cooling procedures. Recommended utilizing ice wands and cooling speed racks, as well as containers that are 4 inches or less. The products were discarded. TCS food items must be stored at 41F or below when cold holding. Corrective Action: Corrected at time of inspection.
