Observed grilled onions on the flat top on the cook line at 78*F, per PIC had been out since 4pm. PIC chose to discard. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed prime rib in hot holding on the cook line with a temp of 114*F, per PIC is on time as a control, but no time was documented. PIC placed 5-9pm on clip board dedicated to time. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. All TCS foods being held under time as a control were properly time stamped at time of inspection. Corrective Action: Corrected at time of inspection.

Observed brown organic matter present on the soda nozzle at the end of the bar. PIC confirmed the presence of organic matter and disassembled the nozzle and immediately threw it in the dishwasher. In equipment such as ice bins and beverage dispensing nozzles and enclosed components of equipment, a frequency specified by the manufacturer, or absent manufacturer specifications, at a frequency necessary to preclude accumulation of organic matter and at least once every 24 hours. Corrective Action: Corrected at time of inspection.

Observed employee's enclosed drinks in the walk-in cooler and service cooler. Areas designated for employees to eat, drink, and use tobacco shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. Advised PIC that employee drinks may be stored in coolers as long as they are isolated and stored away from service item foods. PIC created tubs for employee only storage and relocated their belongings at the time of inspection. Corrective Action: Corrected at time of inspection.
